DELMONICO POT 
5 lb. potatoes
1 pt. heavy cream
1/4 lb. butter
12 oz. Cheddar cheese
4 oz. Parmesan cheese

Oven temperature at 350 degrees. Cut potatoes into 1/2 inch cubes. Cook al dente. Heat heavy cream with butter on very low heat until butter is melted. After potatoes are cooked and drained, leave draining. Stir in cheeses to cream and butter mixture. Keep stirring until consistency is smooth, do not burn. Put potatoes in baking dish. Add cream sauce. Bake in oven for 30-40 minutes until bubbly.
