DELMONICO PUDDING 
1 qt. milk
1/2 c. sugar
3 sm. or 2 very lg. eggs
Pinch of salt
1/2 tsp. vanilla
1 env. Knox's gelatin #1
1 doz. soft macaroons
Whipped cream topping with cherries

Put milk in large saucepan, reserving 1/2 cup cold milk into which you stir gelatin and vanilla and set aside. Heat milk in the saucepan slowly.

While milk is heating separate egg yolks from whites, each in a medium size bowl. Beat yolks until creamy. Add sugar and salt beating well. With clean mixers beat egg whites stiff.

When milk is scalding add egg yolk mix. Slowly stir until thickens. Remove from stove. Add milk-gelatin mix and stir well. Then fold in egg whites.

Line serving bowl with macaroons. Pour pudding mixture over them. Let cool, cover and refrigerate overnight.
