BAKED CHEESE BLINTZES | |
1 1/2 c. flour 2 tbsp. sugar 1 tsp. baking powder 1/2 tsp. salt 2 eggs 3 tbsp. melted butter 1 tsp. vanilla CHEESE FILLING: 15 oz. ricotta 1 egg yolk 1 egg 1 tsp. vanilla 1/2 c. sugar Mix dry ingredients together. Add eggs, melted butter and vanilla. With mixer or whisk, add milk gradually so batter stays smooth. Heat pan and lightly butter or spray pan. Pour scant 1/4 cup of batter into pan. Tilt pan around to spread batter thinly. Cook until dry looking then flip. Cook one more minute. Stack crepes until down with remaining batter. CHEESE FILLING: Mix all filling ingredients together. Spoon 2 tablespoons of filling in each crepe. Roll up by folding 2 corners over then roll up opposite ends jelly roll style. Place in foil lined pan and lightly brush tops with soft butter. Cover pan with foil. Bake 35-45 minutes at 350 degrees. |
