BLINTZ CASSEROLE 
1 lb. creamed cottage cheese
1 lb. farmer or pot cheese
2 eggs
1/2 c. sugar
1/2 tsp. vanilla
Juice of 1 lemon
Pinch of salt
Cinnamon

Mix and set aside.

BATTER:

1/2 lb. butter
1/2 c. sugar
2 eggs
1 c. flour
3 tsp. baking powder
Pinch of salt
1/4 c. milk
1 tsp. vanilla

In a 2 quart Pyrex oblong pan, melt additional butter.

For Batter: Cream sugar and butter. Add eggs. Sift together flour, baking powder, salt. Alternate this dry mixture with milk and pour into the above sugar mixture. Add vanilla. Pour 1/2 of this batter into the Pyrex dish. Spoon in all of the filling. Cover with remainder of batter. Bake at 300 degrees for 1 to 1 1/2 hours until golden brown on top.

This should only be baked for 45 minutes to 1 hour if intended to freeze. After freezing, heat at 300 degrees for approximately 1/2 hour. Serves 8 to 12.
