CLAM FILLING FOR STUFFED CELERY 
1 (2 1/2 oz.) can minced or chopped clams, drained
1 (3 oz.) pkg. cream cheese
1 tsp. lemon juice
1 green onion, diced
1/4 tsp. salt
Dash of hot pepper

Combine all ingredients. Clean and stuff celery. Cut into serving pieces and chill.

HINT: Removing strings from celery while cleaning makes it more tender and easy to cut. Cut off thin layer on bottom so stalks lay flat.
