APPLE SPICE MUFFINS 
2 c. flour
4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/3 c. shortening
1/4 c. sugar
1 egg
1 c. milk
3/4 c. apple, chopped

Sift flour; measure, add baking powder, salt, cinnamon and nutmeg; sift again.

Cream shortening; add sugar gradually; continue beating until light and fluffy; add egg and beat well; stir in milk and chopped apples; add flour mixture and stir just enough to moisten the dry ingredients. Do not beat.

Fill greased muffin pans 2/3 full; place a wedge of apple dipped in sugar on top of each muffin if desired. Combine an additional 1/4 teaspoon cinnamon and 2 tablespoons sugar; sprinkle on muffin batter. Bake in a hot oven (400 degrees) for 20 to 25 minutes. Makes 12 to 15 medium sized muffins.
