PUMPKIN APPLE STREUSEL MUFFINS 
MUFFINS:

2 1/2 c. all-purpose flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. Libby's solid pack pumpkin
1/2 c. vegetable oil
2 c. peeled finely chopped apples

In large bowl, combine first five ingredients and set aside. In medium bowl, combine eggs, pumpkin, and oil. Add liquid ingredients to dry ingredients. Stir just until moistened. Stir in apples.

Spoon batter into greased or paper lined muffin cups filling them 3/4 full. Sprinkle streusel topping (see below) over batter.

Bake muffins at 350°F. for 35 or 40 minutes until done. For 6 giant muffins, increase baking time to 40 or 45 minutes.

STREUSEL TOPPING:

2 tbsp. all-purpose flour
1/4 c. sugar
1/2 tsp. cinnamon
4 tbsp. butter

In small bowl, combine flour, sugar and cinnamon. Cut in butter until mixture is crumbly.

This recipe made 18 muffins, with each cup filled 3/4 full. Cooking for 30 minutes was perfect. These were delicious and got rave reviews when served to small group of ladies!

Really great. I have a dairy allergic kiddo, so this worked fabulously. I reduced sugar to 1 cup and recommend that. I added a quick streusel to the top, which everyone enjoyed. 1/3 cup brown sugar, 1 tablespoon flour, 1 tsp cinnamon and 1 tablespoon smart balance (had extra) also. Only took 30 minutes to bake and they were very generous in size. Will definitely make again!!!!

Wow!! Used applesauce instead of oil (had a few tablespoons of oil mixed in) and yum, yum, good!!!! Used organic sugar, flour, butter and cage free eggs. We all approve!! Made regular and large muffins.

The recipe was great, the apples kept it very moist, I only added 1 cup of sugar, it was not too sweet but tasty. I thought the mix was kind of thick so I added a tablespoon of milk and added flax seed. I didn't do the streusel topping and they were still awesome.
