BRUNCH DISH 
6 or 8 slices white bread, cubed
1 lb. bacon
1 pkg. Smokies
10 eggs, beaten
3 1/2 c. milk
2 c. American cheese, grated
1 c. Monterey Jack cheese, grated

Cut up bacon and fry crisp. Put cubed bread in bottom of greased 9 x 13-inch pan or flat casserole. Cut up Smokies. Sprinkle bacon and smokies over bread, then grated cheese. Combine beaten eggs and milk, and pour over mixture. Refrigerate overnight. Bake at 350 degrees for 1 hour.
