MOCHA TRUFFLE COOKIES 
1/2 c. butter
1/2 c. chocolate chips
1 tbsp. instant coffee crystals
3/4 c. sugar
3/4 c. packed brown sugar
2 eggs
2 tsp. vanilla
2 c. flour
1/3 c. cocoa
1/2 tsp. baking powder
1/4 tsp. salt
1 c. chocolate chips

In large saucepan, melt butter and 1/2 cup chocolate chips over low heat. Remove from heat. Stir in coffee crystals; cool 5 minutes. Stir in sugars, eggs and vanilla.

In a medium mixing bowl, combine flour, cocoa, baking powder, and salt. Stir in coffee mixture. Stir in 1 cup chocolate chips. Drop dough by rounded tablespoon onto lightly greased cookie sheets. Bake in a 350 degree oven for 10 minutes. Let cool 1 minute before removing from cookie sheet.

Makes 30 cookies.
