CRAZY FRUIT UPSIDE - DOWN CAKE 
Soft, delicious cake with juicy fruit topping.

TOPPING:

2 or 3 c. chopped fruit (see recommendations below)
1 tbsp. vegetable oil
1/2 to 1 tsp. cinnamon or nutmeg
2 tbsp. milk
1/2 c. unsweetened fruit juice (apple, pineapple, or orange)
1 1/2 c. unbleached white flour
1/2 tsp. baking soda
1 tsp. baking powder

CAKE:

1 lg. egg
1/4 c. vegetable oil

To prepare topping toss together fruit, oil, and spice to taste. Spoon mixture into an oiled 8-inch square casserole dish.

To prepare cake, beat together egg, oil, milk, and fruit juice. Add flour, baking soda, and baking powder; beat well. Pour batter over fruit. Smooth evenly in casserole dish.

Bake at 350 degrees for 30 minutes. Cool until just warm and turn out onto a serving dish. Serve plain or with ice cream or whipped cream. Serves 4-6.

Recommended Fruit: Apples, whole blueberries, peaches, pears, pineapple, bananas.
