CRAZY FRUIT UPSIDE DOWN CAKE 
1 lg. egg
1/4 c. oil
2 tbsp. milk
1/2 c. unsweetened pineapple juice
2 pkg. sugar substitute, suitable for baking
1 1/2 c. self-rising flour

FRUIT MIXTURE:

2-3 c. chopped pineapple or 1 lg. can pineapple, drained
1 tbsp. oil
1 tsp. cinnamon
1 pkg. sugar substitute

Prepare an 8 inch square pan. In a bowl combine fruit, 1 tablespoon oil, cinnamon and sugar substitute. Toss well. Spoon this mixture into the prepared pan. Make cake.

In a large bowl combine all the cake ingredients. Mix well. Spread this over the fruit mixture and bake at 350 degrees for 30 minutes or until done. Cool or serve warm with diabetic ice milk. May use apples, peaches, pears.
