TOM'S SMOOTH SAUSAGE GRAVY 
1 lb. sausage (any kind)
1/2 stick butter (4 tbsp.)
3 or 4 tbsp. flour
salt and pepper
2 to 3 c. milk
1/2 c. sour cream

Crumble sausage into hot pan. Fry until done, then add butter and pepper. When butter is melted, add flour. Stir until flour is cooked (light tan color). Over high heat stir in milk, 1 cup at a time. Mixture should be thick. Add sour cream and stir until smooth. Be careful not to allow bottom of pan to scorch (a heavy bottomed pan will help prevent this).

If gravy is too thin, cook over low heat until thick; if gravy is too thick, add milk or water to thin.

Season with salt and pepper to taste. Spoon over your favorite biscuits. If this don't put a smile on your face go back to bed!
