CHICKEN AND TOMATO CASSEROLE 
1 broiler fryer chicken (about 3 lbs. cut up
3 tbsp. shortening
1/2 c. chopped onion
1/4 c. chopped pepper
1 (28 oz.) can tomatoes, undrained
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 tsp. salt
1 tsp. oregano

Brown chicken in shortening in a skillet. Place in a 2-quart casserole. Saute onion and pepper in fat in skillet. Stir in remaining ingredients and pour over chicken.

Bake, covered, at 350 degrees for 1 hour or until chicken is tender. Serve with hot cooked spaghetti. Yield: 4 servings.
