CHICKEN CASSEROLE WITH TOMATOES
AND SUGAR PEAS
 
1 (3 to 3 1/2 lb.) chicken, cut into pieces
1/4 c. flour
3 tbsp. olive oil
2 onions, chopped
2 cloves garlic, crushed
1 lb. tomatoes, peeled and chopped
1 1/2 to 2 c. white wine
3 c. sugar peas
Salt and pepper to taste
Juice of 1 lemon

Dust chicken with flour. Heat olive oil in shallow pan and fry chicken until golden brown. Remove and place in casserole. Add onions to pan and saute until tender. Add garlic, tomatoes, wine, sugar peas, salt and pepper; bring to boil. Add to chicken. Cover casserole and put into 350 degree oven for 1 hour or until chicken is tender. Serves 4.
