DIET PINEAPPLE CHEESECAKE 
1 lb. cottage cheese
1 egg
8 packets of "Sweet and Low"
1 lb., 4 oz. can crushed pineapple in it's own juice
1 tsp. vanilla
1 tsp. lemon juice
1 env. Knox gelatin
3/4 c. juice from drained pineapple

In blender mix all ingredients except cottage cheese and pineapple. Blend well. Add cottage cheese slowly and continue until real smooth. In 8 inch pan make crust of well drained pineapple. Pat down and then pour in cheese mixture. You may add and sprinkle cinnamon over top. Bake at 325 degrees for 20 minutes. Do not overbake - it will get too dry.
