LEMON CAKE WITH RHUBARB 
1 lemon cake mix
1 c. sugar
3 c. rhubarb, chopped
8 oz. heavy whipping cream

Prepare lemon cake as directed on box, and pour this batter into a 9x13-inch baking dish. Set aside.

Sprinkle sugar over rhubarb and pour cream over the rhubarb and sugar mixture. Mix well.

Pour the rhubarb mixture over the lemon cake batter and bake at 350°F until done (about 50-60 minutes) or when a toothpick inserted in the center comes out clean.

This may be served with whipped cream (optional).
