PEANUT BUTTER OATMEAL COOKIES 
1 1/2 c. brown sugar
3/4 c. butter flavored Crisco
1 c. peanut butter
1/2 c. water
1 egg
1 tsp. vanilla
3 c. Quaker Oats (quick or old fashioned)
1 1/2 c. flour
1/2 tsp. baking soda

Beat together Crisco, brown sugar and peanut butter. Add water, egg and vanilla; beat. Add combined dry ingredients; mix well. Cover; chill about 2 hours.

Heat oven to 350 degrees. Shape into 1-inch balls. Flatten with fork dipped in sugar. Bake 9-11 minutes or until golden brown. Yield: About 6 dozen.

I thoroughly enjoyed these cookies. They were thick, soft, and chewy. I used 1 cup of margarine, a 1/2 teaspoon of cinnamon, 1/2 cup of chopped peanuts, and 1 cup of semi-sweet chocolate chips. I substituted milk for the water, added 2 tablespoons of brewer's yeast and a tablespoon of flax-seed I had on hand from another cookie recipe for health benefits, neither of the two altered the cookie in any way.
