PEANUT BUTTER OATMEAL COOKIES 
3/4 c. butter flavor Crisco
1 c. peanut butter
1 1/2 c. firmly packed brown sugar
1/2 c. water
1 egg
1 tsp. vanilla
3 c. Quaker Oats (quick or old fashioned, uncooked)
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
Granulated sugar

Beat first three ingredients until creamy. Beat in water, egg and vanilla. Add combined dry ingredients; mix well. Cover; chill about 2 hours.

Heat oven to 350 degrees. Shape into 1 inch balls. Place on ungreased cookie sheet; flatten with tines of fork dipped in granulated sugar to form criscross pattern. Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered. Makes about 7 dozen.

These are my most requested cookie. I add chocolate chips and refrigerate overnight before baking. I always have a batch in a zip lock bag chilling in the fridge for when company comes. I have a teenage son, these help with all those teenage boy appetites.
