WHITE LAYER CAKE 
2/3 c. shortening
2 1/2 c. sifted cake flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 c. sugar
3/4 c. milk
1 tsp. vanilla
1/4 c. milk
5 egg whites, stiffly beaten
1/2 c. sugar

Cream shortening. Sift together flour, baking powder, salt and 1 1/2 cups sugar. Add 3/4 cup milk and vanilla. Mix until all flour is dampened. Beat 1 minute.

Add 1/4 cup milk; blend. Beat 2 minutes. fold in egg whites with 1/2 cup sugar. Beat 1 minute. Pour into 2 greased 9-inch pans. Bake in 350 degree oven for 35 minutes. Remove from oven and let cool 5 minutes before removing from pans.

NOTE: If beating with mixer, use medium speed. If beating by hand, use 150 strokes per minute.
