RHUBARB PIE 
3 1/2 c. diced rhubarb
1 (3 oz.) pkg. strawberry flavored gelatin
1/2 c. unsifted flour
1 1/4 c. sugar
1/2 tsp. cinnamon
1/4 c. butter
Pastry for 10 inch two crust pie

In a 2 quart mixing bowl, mix the rhubarb, flour, sugar, and cinnamon. Pour into pastry lined pie pan. Dot with butter and sprinkle gelatin evenly over the rhubarb. Cover with top crust and place a few thin slabs of butter on top. Sprinkle lightly with sugar and bake at 350 degrees for 50 minutes. Delicious served plain or with either whipped cream or ice cream.
