RHUBARB CUSTARD PIE 
3 eggs, slightly beaten
2 2/3 tbsp. milk
2 c. sugar
3/4 tsp. nutmeg
4 tbsp. flour
4 c. cut-up pink rhubarb, in medium size chunks
1 tbsp. butter
Pie crust with lattice top

Mix together eggs and milk. Then stir in the sugar, nutmeg, and flour. Then add the rhubarb and put in pie crust. Dot with the butter. Cover with the lattice top. Bake until nicely browned. Serve slightly warm. Bake at 400 degrees for 50-60 minutes.
