OVEN BARBECUED SPARE RIBS
1 side pork spare ribs (3-4 lb.) cut across bones into strips of equal width
1 lemon, thinly sliced
1 sm. onion, thinly sliced
1/2 c. water
1 bottle Hunt's barbecue sauce

Arrange ribs in a single layer in a shallow roasting or broiler pan. Distribute lemon and onion slices evenly over meat. Pour in water. Cover with foil and bake at 350 degrees for 1 hour.

Remove ribs from oven; lift off and discard lemon and onion slices. Lift out ribs and cut between each rib bone to make small pieces. Discard pan drippings.

Return ribs to pan in a single layer with meat side up. Brush all over with barbecue sauce. (At this point you may cover and refrigerate ribs and sauce for up to a day.)

Return ribs to oven and continue baking, uncovered, brushing often with barbecue sauce, for 30-45 minutes or until meat is well browned and fork-tender. Makes about 2 dozen appetizers.

Variations: Mix 1 cup barbecue sauce with 1/2 cup pineapple or peach preserve and 1 tablespoon soy sauce.
