“JIFFY CHOCOLATE COOKIES” IS IN:

JIFFY CHOCOLATE COOKIES 
2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
3 cups quick cooking oatmeal
1/2 cup peanut butter

Boil together sugar, cocoa, butter and milk for 2 minutes. Add peanut butter and quick cooking oatmeal; mix well.

Drop by spoonfuls onto foil.

I have been making these for years. They are more like a peanut butter fudge than an actual cooking. Really satisfys a sweet tooth. I pour mine into a buttered square pan and then cut them in squares after they harden. Kids of all ages love these.

I also add a 1/2 to 1 tsp of vanilla to the recipe when the peanut butter is completely melted, not only does it make the kitchen smell fantastic but it gives the cookies a little bit of a warmer taste.

To make above recipe better, instead of using 1/2 cup milk, USE one small can Carnation evaporated milk. Also, add 12 large marshmallows to the sugar mixture and bring all to a boil slowly, boil for 5 minutes after it starts to boil and then take off stove before you add the peanut butter and quick oats. Also, before adding the oats and peanut butter, add 1 teaspoon vanilla. I think the submitter just forgot the vanilla.

I have made a variation for years....1 C buter, 6 C sugar, 12 T cocoa, 1/3 C milk, 2 t. vanilla and 2 C peanut butter....add the Quick Oats one cup at a time, stir to coat, between 5-6 C of oats....I use my small ice cream scoop to drop onto waxed paper. Cool, and store in a sealed container in the frig. They are requested by every single one of my 5 adult children and all of their friends!!

I have made these for years. We like them warm, my kids would take the cooled cookies and microwave them a few sec. My daughter ask me to make them without the cocoa and add a little more peanut butter. These are her favorite now.

Try Rice Krispies instead of Oatmeal! And a little corn syrup will add a nice sheen to them!! Omit the cocoa and add a few large marshmallows and you have a great peanut buttery variation of Rice Krispy treats.

I also use this recipe,and omit the cocoa powder, add a bit of pure maple syrup and maple flavoring... great for sweet tooth, but not a chocolate lover. :)
