VEGETABLE SANDWICH SPREAD | |
1 (8 oz.) pkg. Fat Free or Low Calorie cream cheese 1 tsp. lemon juice 1/4 c. celery, finely chopped 1/4 c. green pepper, grated 1/4 c. cucumber, grated 1/4 c. onion, finely chopped 3/4 c. carrots, grated 1 tbsp. mayonnaise Let grated cucumber stand 1 hour. After cucumbers are drained, mix all ingredients and let stand overnight. Be sure vegetables are very fine. Yield: 2 3/4 cups. |
