VEGETABLE SANDWICH 
8 oz. cream cheese
1 c. grated celery
1/2 c. grated green pepper
1/4 c. grated cucumber
3/4 c. grated carrot
2 tbsp. minced onion
3 or 4 tbsp. mayonnaise or enough to make spreadable
1 tbsp. lemon juice
salt to taste

Mix together. Better when made and refrigerated day before.
