CRUNCHY POTATO PANCAKES 
4 medium size potatoes
1 sm. onion
1 egg
1/4 c. flour
Salt and pepper to taste

Grate potatoes on largest holes on four-sided grater (not the slicer part). Grate onion on one of the smaller holes. Add remaining ingredients. Fry in about half inch of oil on one side until dark brown, then turn over. Keep stirring potato mixture as juice and flour settles to the bottom before getting it spooned into the pan. Makes about 10 pancakes.
