POTATO CRUNCHIES 
4 medium potatoes
1/3 c. butter
2/3 c. corn flakes
1 tsp. salt
1/2 c. grated cheese

Boil potatoes with jackets on. Peel when done and slice thickly. Melt butter in a baking dish in hot oven. Add potatoes to melted butter, stirring to coat both sides. Crush the corn flakes and mix with cheese and salt. Place this mixture on top of potatoes. Bake in 400 degree oven for 20 minutes or until heated through and cheese is melted.
