BELGIAN WAFFLES (French Gaufres) 
4 eggs, separated
2 c. flour
2 tsp. baking powder
1 tsp. vanilla
1 tsp. baking soda
1 tbsp. sugar
2 c. milk
1/2 c. melted butter
1/2 tsp. salt

Beat egg yolks in a bowl. Beat in milk, melted butter and vanilla.

Combine and sift remaining dry ingredients into mixture and beat well.

In separate bowl beat egg whites until stiff and carefully fold into batter. Using a Belgian waffle iron, bake and serve with Cherry Sauce or desired topping.

CHERRY SAUCE:

1/4 c. sugar
2 tsp. cornstarch
1/8 tsp. ground cinnamon
1/2 c. orange juice
2 c. pitted and halved fresh sweet cherries
1 tsp. grated orange peel

I didn't use the sauce recipe, but maybe next time. The Waffles were light and fluffy and delicious. Better than any restaurant could make that's for sure!!
