BELGIAN WAFFLES 
2 c. flour
2 eggs
2 c. buttermilk
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
1/4 c. plus 2 tbsp. cooking oil

Mix eggs, buttermilk and oil together. Add dry ingredients. Bake on a hot Belgian Waffle iron. Makes 5 waffles.

For a variety, add some chopped pecans or chocolate or peanut butter chips to batter.
