BASIC BELGIAN WAFFLE 
2 c. flour
1 tsp. salt
8 eggs, separated
1/2 c. butter, melted
1 tsp. vanilla extract
2 c. milk

In a small bowl, mix flour and salt; set aside. In a large bowl, beat egg whites with electric mixer on high speed until stiff peaks form. In another large bowl, beat egg yolks with electric mixer on high speed until thickened and lemon-colored, about 5 minutes. Stir in melted butter and vanilla.

Alternately add flour mixture and milk to yolk mixture, beating well after each addition. Fold egg whites into yolk mixture. Prepare Belgian waffle iron according to manufacturer's directions. Using 1 1/4 cups batter for each waffle, bake on preheated waffle iron 30-60 seconds. Turn waffle iron; continue baking 2-3 minutes or until steaming stops and waffle is golden brown. Makes 6.

This recipe makes AWESOME waffles! They're pretty eggy though. They taste just like German pancakes really, but they are fantastic, I love them.

I was looking for an easy recipe that I could make quickly, without using yeast. I cut the recipe in half (there's only my husband and I) and was able to make four waffles. I need to play around with the new belgian waffler I got to make it crispier, but husband and I were happy with the results. Next time I'm going to add either cinnamon, ginger or orange zest for a different flavor.
