CHICKEN FRIED ROUND STEAK 
1 1/2 lb. round steak, cut 1/2" thick
2 eggs, beaten
2 tbsp. milk or water
3/4 c. fine dry crumbs
1/4 c. oil
Salt & pepper to taste

Pound round steak thoroughly with sharp edged meat pounder or edge of heavy saucer. Cut into serving pieces. Combine eggs and milk; dip steak into mixture, then into crumbs. Brown on both sides in hot oil in heavy skillet. Season. Cover and let simmer over very low heat 45 to 50 minutes. Serves 6.
