OLD FASHIONED RICE CUSTARD PUDDING | |
1/2 c. rice 4 c. milk 1/4 tsp. salt 1/2 c. sugar 2 egg yolks 2 egg whites, beaten stiff 1 tsp. vanilla or dash of nutmeg or rind of 1/2 lemon 1/2 c. seedless raisins Scald milk with rice. Beat egg yolks with sugar and salt. Add hot mixture slowly. Cook in slow cooker until thick. During first hour stir 3 times with fork so that rice will not settle. After first hour stir in raisins. After pudding is thickened, fold in egg whites. Flavor then is added. Serve warm or cold. If you use cooked rice, use 1 cup. |
