OLD FASHIONED RICE PUDDING 
1 1/2 c. cooked rice
1/3 c. water
2 c. milk
2 eggs, beaten
1/3 c. sugar
1 tsp. vanilla
1/4 c. raisins, steamed
Nutmeg or cinnamon

Heat oven to 350 degrees. Combine cooked rice and water in a saucepan; bring to boil. Reduce heat, cover and simmer until all water is absorbed (about 3 minutes). Add milk and boil gently, stirring occasionally until mixture thickens slightly, about 5 minutes.

Combine eggs, sugar and vanilla in bowl. Gradually stir in rice mixture; mix well. Pour into greased 1 1/2 quart casserole. Stir in raisins and sprinkle nutmeg or cinnamon.

Place casserole in a pan containing 1 inch of hot water. Bake uncovered at 350 degrees for 45-50 minutes or until an inserted knife comes out clean.
