OLD FASHIONED RICE PUDDING | |
2 1/2 c. cooked rice 3 tbsp. soft butter 2 tsp. vanilla 3 eggs, beaten 1 1/2 c. evaporated milk (or scalded milk) 2/3 c. brown sugar (or white sugar) 1/2 to 1 tsp. nutmeg 1/2 to 1 c. raisins Thoroughly combine rice with all remaining ingredients. Pour into lightly greased crock pot. Cover and cook on High 2 hours (Low, 4 to 6 hours). Stir after first hour. This recipe may be easily doubled, if desired. I use scalded milk. Also, I use half brown and half white sugar. I use the minimum amount of nutmeg. For pot luck I usually triple the recipe. |
