BAKED ROCKFISH FILLETS 
1 1/2 lbs. rockfish fillets
1/2 c. slivered almonds
1/4 c. minced parsley (optional)
1/4 c. melted butter
2 tbsp. lemon or lime juice
1 tsp. salt
1/4 tsp. pepper

Place fish fillets in shallow baking dish. Sprinkle with almonds and parsley (optional). Combine butter and lemon or lime juice; pour over fish and sprinkle with salt and pepper. Cover and bake in a 350 degree oven 10 minutes, then uncovered, until fish flakes easily with a fork, about 10 more minutes.

Serves 4-6.

This was really good. I put pepper and Cajun seasoning on both sides of the fish before putting the melted butter over it. I also cooked for 10 minutes covered and 15 minutes uncovered (I like my fish well done). Really good, the kids loved it.

Made this tonight and my whole family, which includes a 16 and 11 year old, loved it. I had to bake it a little longer. I added cherry tomatoes scattered all over and they were was delicious. Served it over rice for the kids and hubby and over broccoli for me. Awesome!

A fisherman's wife taught me how to cook rock fish: butter, minced onion, salt & pepper on top, and in the hot oven for 20 or 30 minutes depending on the thickness of the fillet. I added lemon.

Just want folks to know another variation that worked well. I followed advice to put filets atop lemon slices, to use Old Bay, and to cook five minutes longer uncovered, and I laid tomato slices not just beside but on top of the whole dish. I used crushed almonds rather than slivered, and it made a nice crust. And I drizzled a bit of olive oil instead of using butter. It was moist and delicious.

I live in Spain & used fresh "Salmon del Mar" which I think is similar to Rockfish.
Instead of almonds I added a little white wine & used 10gms only of butter.
Result was absolutely delicious!!!
