BAKED FISH FILLETS 
1 (12 oz.) pkg. frozen fish fillets or fresh (flounder trout, redfish, sole, etc.)
1/3 c. mayonnaise
1/4 c. grated Parmesan cheese
2 tbsp. fine dry bread crumbs (I use Italian)

Line a very shallow baking pan with foil; grease foil. Place fillets in one layer in pan. Spread with mayonnaise; sprinkle with cheese, then with crumbs. Bake in a preheated 375 degree oven until lightly browned and fish flakes easily and looks opaque when tested with a fork, 25 minutes. Makes 2 or 3 servings.

Man! I didn't think this very simple recipe would be so good! I cooked a Rainbow trout and used Keebler Toasted onion crackers instead of fine dry dread crumbs. But I don't think the crumbs or crackers is what made the recipe great! Thanks Cooks.com!

This was the first recipe I baked at 7 years old and everyone always loves it! BUT way faster if broiled for just a few minutes until browned! gives it a beautiful look and crunchy taste :D
