MRS. T.'S BAKED FISH 
6-8 trout or white fish fillets
Parmesan cheese
Soft bread crumbs (3-4 slices grated bread)
1 1/2 tbsp. butter
1/2 sm. onion, finely chopped
Salt
Pepper
Shallow baking dish

Butter baking dish; place fish fillets in dish. Sprinkle Parmesan cheese over top of fish, partially covering them. Cook finely chopped onion in butter and mix with bread crumbs. Sprinkle crumb mixture over fillets. Bake at 450 degrees for 15-30 minutes until tender.

This is delicious! Used bass filets my husband had caught earlier. Only had Panko bread crumbs but they worked fine. Added a touch of garlic powder to the onions as they were sauteeing and sprinkled paprika over the crumb topping before the dish went in the oven. Great recipe!

I LOVED this recipe! The sauteed onions gave the bread crumbs a mellow, sweet flavor, yum! I used fresh Talapia and the texture worked out perfect. Watching my cholesterol so I used olive oil where ever butter was called for and it worked out great. I will definitely use this recipe again, and maybe I'll play around a little with the ingredients! Thanks Mrs. T; you know your fish!
