BEEF - MACARONI CASSEROLE 
2 c. macaroni, uncooked
1/2 onion
1 sm. green pepper
1 clove garlic
1/4 c. butter
1/2 tsp. pepper
1 lb. hamburger
Pinch of oregano
1 (8 oz.) can stewed tomatoes
Mozzarella cheese

Cook macaroni in salted water until tender. Drain; set aside. Finely chop onion, green pepper, and garlic. Cook in butter until tender, but not brown. Mix together hamburger, pepper, oregano, and tomatoes. Add onion mixture; mix well. Cook over low heat until hamburger loses its pink color (about 20 minutes). Spread half of cooked macaroni in bottom of casserole dish. Add all of the cooked mixture; cover with other half of macaroni. Bake, uncovered, in 350 degree oven about 15 to 20 minutes. Remove; sprinkle cheese over top; return to oven until cheese is melted.
