VERMOUTH CHICKEN 
1 chicken (cut up)
1 can peeled tomatoes
1 red onion (sliced)
1/2 c. dry Vermouth
1/2 lb. fresh mushrooms
2 tbsp. olive oil
2 cloves garlic (minced)
1/2 tsp. oregano
Salt and pepper
3 tbsp. tomato paste

Brown chicken in olive oil and remove from pan. Add onion and spices. Saute a few minutes and add tomatoes, Vermouth and mushrooms. Nestle chicken back into pan and cover. Simmer 20 minutes, turning once while cooking. Stir in tomato paste and serve.
