RICE & BROCCOLI BAKE | |
2 c. or 1 lb. rice 1/4 stick butter 1/4 tsp. salt 2 (10 oz.) boxes frozen broccoli 1/2 c. chopped celery 1/2 c. chopped onion 1/2 stick butter 1 lb. grated processed American cheese 1 can cream of celery soup 1 can cream of chicken soup Boil rice with 1/4 stick butter and salt; drain and set aside. Boil broccoli; drain and set aside. Fry celery and onion in butter until tender. Then add broccoli to this and fry an additional 10 minutes; set aside. Melt American cheese, add the soup and set aside. Mix rice, broccoli, celery and onion mixture and cheese mixture together well and bake at 350 degrees for 35 to 45 minutes or until top is slightly brown in a 13"x9" pan. Cut into squares and serve. Best when eaten warm but can also be served cold. Let set a little before cutting and serving. Can be cut into 20 large or 40 small pieces. |
