CORN CASSEROLE 
1/2 c. butter
1/3 c. onion, chopped
1 can corn, undrained
1 Jiffy corn muffin mix
3/4 c. green pepper, diced
1 can cream style corn
3 eggs, well beaten
1 c. shredded Cheddar cheese

Saute green pepper and onion in butter. Mix in corn, then beaten eggs and Jiffy mix. Fold in cheese. Put in 8 quart greased casserole. Bake at 350 degrees for 1 hour.
