CHEDDAR CRACKERS 
1/2 c. butter, softened
2 c. (8 oz.) shredded sharp cheddar cheese
1 1/2 c. all-purpose flour
1/2 tsp. salt
1 tbsp. chopped chives

Cream butter and cheese until smooth. Combine flour, salt, and chives; add to creamed mixture, blending well. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten each ball to 1/8-inch thickness with the bottom of a glass dipped in flour. Prick top with fork. Bake at 350 degrees for 12-15 minutes. Let cool on wire rack. Store in tightly covered container. Yield: 4 dozen.
