COMPANY POTATOES 
Cook 10 large unpeeled potatoes, only until slightly firm. Cool and dice.

1/2 lb. American cheese, diced
1 med. onion, diced
1 sm. green pepper, diced
2 slices of bread, cubed
1/2 c. melted butter
Salt and pepper to taste (remember cheese contains salt)
About 1/2 to 3/4 c. milk
Crushed potato chips or corn flakes

Place all cubed and diced ingredients in a large bowl and mix gently with melted butter, salt and pepper. Put into a well greased casserole. Pour over milk and top with crushed cereal or potato chips. Bake covered for almost an hour, then uncover for about 10 minutes to brown nicely. Bake slowly at 300 to 325 degrees as it may bubble over.

Can be made the day before, but do not add the milk and crushed cereal or chips until just before baking. Can also freeze before baking.
