CAULIFLOWER SOUFFLE 
3 tbsp. butter
3 tbsp. flour
1 c. milk
1/2 tsp. salt
3 egg yolks, beaten
1/2 c. American cheese, grated
1 c. cauliflower cooked and coarsely chopped
3 egg white, stiffly beaten

Make a white sauce with the butter, flour, milk and salt. Add the egg yolks and cheese. Stir until the cheese is melted. Add the cauliflower. Fold in the beaten egg whites, and then pour the mixture into a buttered casserole dish. Sprinkle the top with an additional bit of cheese. Set the casserole in hot water and bake in a moderate oven 350 degrees for 50 to 60 minutes. Serve immediately.
