CHEESE SOUFFLE 
1/2 c. cold milk
1/4 c. flour
1 tsp. salt
2 c. grated cheddar cheese
4 egg yolks
1/2 tsp. paprika
4 stiffly beaten egg whites

Make a thick cream sauce (roux) with cold milk, flour, and salt, then add cheese, yolks, paprika. Fold in egg whites. Pour into greased casserole or souffle dish and cook at 350 degrees for 30 minutes or until firm and brown.

My first souffle and is was great. Light, fluffy and tastie and I didn't change a thing. Used sharp cheddar cheese and it had a realy great fried cheese / cheesie taste.
