SUGAR-FREE BANANA CAKE 
2/3 c. banana, mashed
1/2 c. butter, softened
3 lg. eggs
3/4 c. water
1 tsp. vanilla or 1 tbsp. rum
2 c. unbleached flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chopped walnuts -or-
1/2 c. chopped walnuts and 1/2 c. raisins

Grease and flour a 9 x 13 inch pan. Beat together mashed banana and soft butter until creamy. Beat in water and vanilla stirred together.

In a separate bowl, beat eggs until very foamy. Beat into mixture. Blend in flour, baking powder, baking soda and cinnamon. Beat until smooth. Stir in walnuts or walnuts and raisins, if desired. Spread batter evenly in pan.

Bake at 350°F for 20 minutes or until a knife inserted comes out clean. Cool.

Serves 8-10.

Tip: If you're not on a strict diet, you can add a tablespoon of honey for extra flavor.

Pretty bland tasting without any sugar substitute... Added one cup of splenda and it tasted just like banana bread!

Maybe a little bit of sugar (from plants) is actually healthier for you than artificial sweeteners from a laboratory. I personally prefer to avoid all chemicals in my diet, so I've made allowances for a small amount of sugar or honey as long as they serve the purpose of enhancing the palatability of nutritious natural foods.

We don't like raisins and it tasted pretty bland so on my following batch I added 3/4 cup of agarve syrup and it was great. On another batch we also had to leave out the walnuts as we were baking it for my son's preschool class and there are kids with nut allergies.

Use 1 cup of apple sauce for natural sweetness and cut water back to 1/2 cup and add an additional 1/4 c. of flour. Gives it the sweetness it lacks and makes it super moist.
