ALYSE'S SUGAR-FREE CHOCOLATE
CHIP COOKIES
 
These cookies are super-healthy!

1 cup all-purpose flour
1 cup oat flour
1/3 cup milled flaxseed
1 tsp. baking soda
1 tsp. salt
1/4 cup unsweetened coconut flakes (optional)
1/2 cup (1 stick) butter, softened (I use unsalted)
1/2 cup coconut oil
3/4 cup Splenda brown sugar blend
1/2 cup Splenda (or other sucralose brand)
2 egg yolks
1 tsp. pure vanilla extract
1 cup bittersweet or dark chocolate chips
1/2 cup chopped nuts (optional)

Preheat oven to 375°F.

In a mixing bowl combine first 6 ingredients and blend well. Set aside.

In another large mixing bowl, cream together butter, coconut oil and sugar/sucralose until smooth. Beat in egg yolks and then stir in the vanilla. Slowly add flour mixture. Fold in chocolate chips and nuts.

Drop by the tablespoon onto ungreased baking sheets and bake at 375°F for about 8 to 10 minutes.

Makes about 2 dozen.
