CRANBERRY PUDDING | |
2 tablespoons sugar 1/4 cup molasses 1/4 cup light corn syrup 1 1/2 cups flour 1/2 teaspoon salt 1/3 cup hot water 2 teaspoons baking soda 1 1/2 cups cranberries, halved Sift flour, measure, resift with sugar and salt. Dissolve baking soda in hot water. Combine liquid, molasses and the corn syrup. Add dry ingredients gradually. Beat thoroughly. Add cranberries. Mix well. Pour into greased pudding mold (6 cup size). Steam for 1 1/2 hours. Serve with the following sauce. RICH BUTTER SAUCE: 1 cup sugar 1/2 cup butter 1 cup cream Place all ingredients in a saucepan. Bring to a boil. Serve hot over pudding.
