PAN SEARED SAUSAGES OVER
RIGATONI
 
2 package Italian sausages (either hot or sweet)
1 box pasta (Rigatoni or ziti or any pasta)
1 6oz can tomato paste
1 jar marinara sauce
2 cups Merlot or any red wine
Parsley
Crushed red pepper (optional)
Cilantro
Oregano
Ground sage
Rosemary leaves
Ground Marjoram
8 cloves garlic
1 Spanish onion
1 case sliced Mushrooms
1 can Black olives
Romano cheese
Mozzarella cheese
Salt & black pepper, to taste
Olive oil

Prepare Italian sausage as listed on package or cook until no longer pink. Prepare pasta according to package directions.

Preheat oven to 400°F.

Chop the garlic and onions.

In a stainless steel pan, place 1 teaspoon of olive oil and 1 tablespoon of butter. Mix together the chopped Spanish onions, garlic, cilantro, parsley, 1 teaspoon of the ground sage and 1 teaspoon of the ground Marjoram. Stir briskly.

Add the mushrooms and Merlot/red wine while stirring.

In a small saucepot, add the tomato sauce and the tomato paste together.

Add the onion/garlic mixture to the sausages. Pan sear the sausages for 35 minutes in oven.

Serve the sausage with the onion/garlic mixture over the pasta with the sauce and cheese.
