SLICED TOMATO, MOZZARELLA AND
LEMON WITH BASIL VINAIGRETTE
 
3 lg. tomatoes
1 lb. fresh Mozzarella
2 lemons

BASIL VINAIGRETTE:

1/4 c. lemon juice
1 tbsp. Dijon-style mustard
1/4 tsp. salt
1 tsp. pepper
1/2 c. olive oil
1/2 c. basil, finely chopped

Alternate thin slices of tomatoes, Mozzarella and lemon on a plate and dress with basil vinaigrette.

In a blender, add lemon juice, mustard, salt and pepper. Blend well, slowly add olive oil to mixture and blend until thoroughly mixed. Before pouring over tomatoes, stir in 1/4 cup chopped basil. Use remaining 1/4 cup of basil for garnish.

Serves 10.
